INGREDIENTS
​​1 medium-sized jicama, peeled, diced into 1/2" pieces (will yield about 2 1/2 cups)
1 red bell pepper, diced
1 onion, diced
4-5 baby bella or small white mushrooms, diced
1 tsp chili powder
1​ tsp​ ​paprika or​ ​smoked paprika
½ tsp garlic p​​owder
1/2 tsp oregano
¼ ts​p sea salt
¼ tsp black pepper
1-2 tbsp fresh parsley, minced
Dash cayenne pepper (optional)
Avocado to serve
