Recipe: Chicken and Wild Rice Bake

"It couldn't be easier to pull together and it freezes like a dream...."

INGREDIENTS
1/2 cup chopped onion
1/2 cup sliced fresh mushrooms
1 stalk celery, chopped
2 pounds bone-in, skin-on chicken thighs (about 4 large)
1/2 cup vinaigrette of choice
2 cups long-grain brown rice
2 tablespoons wild rice
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
1 teaspoon kosher salt
1/4 teaspoon freshly ground black peppper
4 cups low-sodium chicken broth
