Recipe: Catskills Apple Dumplings

INGREDIENTS
Butter, for coating the pans
5 small, tart apples (1 1/4 pounds total), such as Mitzu, Granny Smith, or Jonathan
10 tablespoons (5 ounces) unsalted butter, melted, divided
1/2 cup granulated sugar, plus more for sprinkling
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon, plus more for sprinkling
1/2 teaspoon fine salt
2 frozen dpuff pastry sheets (about 1 pound 1 1/4 ounces total), thawed in the refrigerator
1 large egg, lightly beaten
