INGREDIENTS

CRUST:
•
1 cup macadamia nuts
•
1 cup pecans (you can also use almonds)
•
4 medjool dates -- pitted
•
1/3 cup unsweetened shredded coconut (if you don't care for coconut, simply omit)
•
1/4 teaspoon vanilla
•
pinch of salt
•
Place all of the ingredients into the bowl of a food processor fitted with the S-blade. Process for several minutes until the crust "dough" begins to ball up (it should feel sticky and stick against the side of the processor bowl when you press it)

FILLING:
•
2 cups cashews -- soaked
•
12 medjool dates -- pitted
•
1 cup strawberries -- diced
•
1/2 teaspoon vanilla
•
3/4 coconut oil - melted (simply place in coconut oil in a small bowl in shallow hot water until melted)
•
1/3 cup lemon juice
•
1 cup almond milk
•
Place all ingredients into a blender and blend until thick and smooth.
•
TIP: This will make a lot of very thick liquid, so you may need to make the filling in two batches and/or stop the blender occasionally to mix it by hand with a spoon.
