INGREDIENTS

Step 1: Make the crust first, so it can set up.

Pecan Cheesecake Crust Ingredients:

◾1 cup finely ground pecans
•
◾4 tablespoons butter or Earth Balance melted.
•
◾1-2 tablespoons sugar/sweetener {we used Xylitol}
•
Cheesecake Filling…
•
◾2 packages reduced fat or 1/3 less fat cream cheese, softened.
•
◾2 cups fat free plain Greek yogurt.
•
◾1 tablespoon pure vanilla extract.
•
◾6 tablespoons powdered sugar. {we used Xylitol we powdered in the food processor. Tutorial here.}
•
Raspberry Cheesecake Sauce Recipe:
•
◾1-2 cartons of fresh raspberries, clean and dry.
•
◾Sweetener to taste. {we used Agave nectar}
•
Place berries in food processor, start with a little of your sweetener of choice and puree. Taste and adjust sweetness.
•
When ready to serve, remove cheesecake from refrigerator and pour the raspberry sauce on to top of the cheesecake. YUM!
