5 pounds potatoes (I use half Yukon Gold, half russet potatoes)
4 large cloves garlic, minced
fine sea salt and freshly-cracked black pepper
6 tablespoons butter
1 1/2 cups buttermilk
1/3 cup each: chopped fresh chives, chopped fresh dill, chopped fresh parsley*
4 ounces cream cheese, room temperature
