INGREDIENTS

1/3 cup lemon juice

1/3 cup olive oil
•
3 Tbs. fresh cilantro, chopped
•
Sea salt and fresh ground black pepper, to taste

1 tsp southwest seasoning (I like Mrs. Dash Fiesta Lime)

1 cup Quinoa, rinsed and drained
•
1 tsp ground cumin
•
1 can corn kernels, drained and rinsed
•
1 can black or kidney beans, drained and rinsed (I prefer black but my kids will only eat kidney…)
•
1 plum/small tomato ( I didn’t have any on hand this time)
•
1 zucchini or yellow zucchini squash, diced
•
1/4 cup red onion, finely chopped
