INGREDIENTS

½ cup quinoa, rinsed

1 cup water

1 Tbsp olive oil
•
1 small onion, chopped
•
3 cloves garlic, minced
•
4 medium carrots, peeled and chopped
•
1 green pepper, chopped
•
1 red pepper, chopped
•
1 medium zucchini, peeled and chopped
•
1 can white beans (if they come in tomato sauce, you can include the sauce)
•
3 large tomatoes, skinned and chopped
•
2-3 small packs of tomato paste (the 100-gram size, or about 4 Tbsp)
•
½ Tbsp chili powder (or more if you prefer)
•
1 Tbsp cumin
•
salt and black pepper, to taste
