INGREDIENTS
canola or olive oil, for cooking
1 onion, peeled, halved and thinly sliced
2 garlic cloves, crushed
1 Tbsp. grated fresh ginger
1-3 cups chopped fresh veg – any kind you like
2-3 tsp. curry paste
1/4 tsp. salt
1 14 oz (398 mL) can coconut milk
A handful of fresh spinach, chard or kale, chopped (remove the stems)
