For the Lentils:
•
1 cup lentils
•
2 fresh bay leaves
•
1 small onion, left whole
•
For the Soup Base:
•
3 tablespoons olive oil
•
2 carrots, chopped
•
1 onion, chopped
•
2 celery ribs, chopped
•
1 bunch parsley, stems chopped
•
2 to 3 sprigs rosemary, chopped
•
1 potato, peeled and chopped
•
1 quart veal stock or beef stock
•
Grated Pecorino and finely chopped parsley tops, to finish
