4 whole eggs

2 egg yolks

1 cup half and half
•
½ teaspoon salt
•
1 Tablespoon olive oil
•
2 shallots or half a yellow onion, chopped
•
½ - 1 cup vegetables (I prefer 1 cup baby fresh spinach)
•
1 ½ cups shredded cheddar or Monterey Jack cheese
