4 to 5 cups vegetable oil for frying

3 tablespoons vegetable oil
•
2 quarts buttermilk (low-fat or full-fat is fine)
•

1 1/2 inch ginger, crushed to a paste

2 yellow onions, sliced into half moons

1 teaspoon red chile flakes
