Pumpkin Spice Cupcakes (Gluten & Dairy Free)

"These pumpkin spice cupcakes are the perfect fall treat! They're gluten and dairy-free and taste like you got them from a bakery...."

INGREDIENTS
1/4 cup avocado oil
1/4 cup pumpkin puree
1/3 cup coconut sugar 
1 tbsp maple syrup 
1 egg (sub a flax egg, see notes)
1 tsp vanilla extract
1 cup almond flour
1/3 cup tapioca starch
1/4 tsp baking soda
1 1/2 tsp pumpkin pie spice
4 oz dairy-free cream cheese, room temperature (I use this)
1/2 cup palm shortening
1 cup powdered sugar (I use this)
