INGREDIENTS
For the Herbed Yogurt:
1/2 cup plain yogurt
2 Tbs. chopped fresh cilantro
1 lime, zested and juiced, both reserved
For the soup:
2 tsp. ground cumin
1 1/2 tsp. ground coriander
1 tsp. ground turmeric
1 tsp. ground ginger
1 tsp. paprika
3 Tbs. Filippo Berio Extra Virgin Olive Oil
1 1/2 cups medium-diced yellow onions (about 1 large)
Kosher salt
1 Tbs. chopped fresh garlic
1 Tbs. chopped fresh ginger
1 large (30-oz.) or 2 regular (15-oz.) cans of pumpkin purée
3 cups broth (low-sodium chicken or vegetable)
1 cup coconut milk, well whisked until smooth
