INGREDIENTS
2   bone-in chicken hind quarters, skin removed
1 1/2  cups water
4   cups Homemade Chicken Stock or reduced-sodium chicken broth
3/4  cup brown lentils, rinsed and drained
1   tablespoon olive oil
2   cups coarsely chopped onions (2 large)
1   cup coarsely chopped carrots (2 medium)
1   cup chopped celery (2 stalks)
3/4  cup dry red wine
1  15  ounce can pumpkin
1  14 1/2 ounce can no-salt-added diced tomatoes, undrained
1 1/2  teaspoons ground cumin
1   teaspoon dried oregano, crushed
1/2  teaspoon chili powder
1 - 2   tablespoons bottled Louisiana hot sauce
 Plain fat-free Greek yogurt (optional)
 Chili powder (optional)
