"This Puerto Rican pork roast is stuffed with garlic, marinated in citrus juice, and slow roasted to fork tenderness. I made this one in the oven, but it would be even better slow smoked over charcoal. I like it best served over rice and in Puerto Rico it's usually served with plantains on the side.
