1/3 cup fresh lime juice
1 tablespoon red wine vinegar
1 teaspoon ground cumin

2 teaspoons coarse salt (kosher or sea)
1 teaspoon freshly ground black pepper
1 pork shoulder roast (4 to 5 pounds)
Fresh or frozen banana leaves or a 12 x 24 inch sheet of aluminum foil (optional)
