1 to 4 hours for curing the meat.

For the rub:
4 tablespoons coarse salt (kosher or sea)
2 tablespoons light brown sugar
2 teaspoons freshly ground black pepper
1 teaspoon granulated garlic
1 teaspoon onion powder
1 teaspoon ground allspice
1 teaspoon chili powder or paprika
1/2 teaspoon ground cinnamon
3 racks baby back pork ribs (4 to 5 pounds, total)
For the pineapple spray:
2 cups pineapple juice
1/2 cup rum
2 tablespoons Worcestershire sauce
Pineapple Barbecue Sauce (recipe follows)
Other Items Needed:
20 whole allspice berries (optional);
1-1/2 cups wood chips or chunks (preferably apple or other fruitwood),
soaked for 1 hour to cover, then drained; a clean spray bottle.
