This delicious recipe for jambalaya is a great one pot meal.

1 tablespoon (15 ml) vegetable oil

1/2 lb (225 g) boneless skinless chicken breasts,

cut into 1" pieces
•
1/2 lb (225 g) fully cooked andouille or italian
•
sausage, sliced
•
1/2 lb (225 g) uncooked shrimp, peeled
•
and deveined
•
2 teaspoons (10 ml) Creole seasoning
•
1 teaspoon (5 ml) dried thyme leavesr
•
1/8 teaspoon (0.5 ml) cayenne pepper
•
1 onion, chopped
•
3 garlic cloves, minced
•
1 green bell pepper, chopped
•
3 stalks celery, sliced
•
1 cup (250 ml) long grain rice
•
16 oz (475 ml) canned chopped tomatoes, undrained
•
1 cup (250 ml) chicken stock
•
3 tablespoons (45 ml) fresh parsley, minced
