This chicken and rice is a Spanish classic enjoyed with many variations.

3 lb (1.3 kg) chicken, skin removed and cut,

into 8 pieces
•
3 tablespoons (45 ml) olive oil
•
1 chorizo sausage, thinly sliced
•
(optional)
•
1/2 cup (125 ml) white wine
•
1 small onion, diced
•
2 garlic cloves, minced
•
1 red bell pepper, cored, seeded and diced
•
1 large ripe tomatom peeled, or 2 canned
•
plum tomatoes, seeded and chopped
•
1 cup (250 ml) uncooked long-grain white rice
•
1/2 cup (125 ml) frozen peas

3 cups (750 ml) chicken stock or broth

1 teaspoon (5 ml) salt
