INGREDIENTS

¼ cup whole milk ((60ml))
2 ½ teaspoons active dry yeast
3 Tablespoons + 1 teaspoon granulated sugar
2 Tablespoons light brown sugar (firmly packed)
6 Tablespoons unsalted butter (melted)
1 cup unflavored mashed russet potatoes
1 large egg + 1 large egg yolk
1 1/2 teaspoons salt
4 cups all-purpose or bread flour (plus additional as needed (500g+), divided)
1 large egg
1 teaspoon water
