INGREDIENTS

Cooking/Inactive time: 70 minutes
INGREDIENTS:
•2-pound pork loin, skin scored
•Sea salt, freshly ground pepper
•6 ounces Manchego cheese (or any hard, grainy cheese), thinly sliced
•5 ounces membrillo (or any kind of jelly–apple or pear is closest to quince, the fruit in membrillo)
•2 sage sprigs
•1 thyme sprig
•Olive oil
•1 head of garlic, cut in half horizontally
•3/4 cup medium-dry sherry wine
KITCHEN ITEMS NEEDED:
•Butcher’s string/twine
•Roasting pan
•Cutting board
•Knife
•Ideal if you have it – Meat thermometer
