INGREDIENTS
2-1/2 pounds boneless pork loin (cut into 1-1/2 inch cubes)
2 tablespoons olive oil
1 cup chopped onion
3 garlic cloves minced
2 cups water
1 28 oz can stewed tomatoes
1 14.5 oz can diced tomatoes with green chiles
7 med sized red potatoes peeled and cut into 1 inch cubes
1 tablespoon cilantro (fresh or dried)
2 teaspoons dried oregano
1-1/2 teaspoons fennel seed
2 teaspoons ground cumin
1 teaspoon salt
1/4 teaspoon black pepper
1 15 oz can red beans, drained
8 oz frozen sliced okra (1/2 of a 16 oz bag)
