1 tablespoon kosher salt

2 cups cubed bread, baguette or nice white sandwich loaf works well
•
(steer clear of wheat, seeds, and strongly-flavored breads like sourdough or olive bread)
•
2 eggs, beaten
•
1 cup of cream
•
2 tablespoons olive oil
•
1/2 onion, chopped
•
3 cloves of garlic, chopped
•
Spices:
•
1/2 teaspoon pepper,
•
1 1/2 teaspoons fennel seeds,
•
1 teaspoon chili flakes (more or less to taste),
•
1 teaspoon dried oregano
