INGREDIENTS
2 large eggplant (or 3 medium sized)
1/2 tsp salt
2 tbsp honey ((or 2 large medjool dates for Whole30))
1 birds eye chili
3 tbsp coconut aminos
1/3 cup chicken stock
1 tbsp balsamic vinegar
2 1/2 tbsp sesame oil
2 cloves garlic (crushed)
500 grams ground pork (or turkey/chicken)
2 1/2 tbsp finely chopped ginger
1 cup chopped scallions
1 1/2 tbsp sesame seeds
1/4 cup thai basil ((or cilantro if you are unable to find it))
