4 1-inch thick bone-in center cut pork chops (leave at room temperature for 30 minutes before cooking)
1 teaspoon Kosher salt
1 teaspoon fresh ground black pepper
1 tablespoon unsalted butter
1 tablespoon olive oil
6 ounces sliced mushrooms
1 large shallot, (minced)
2 cloves garlic, (minced)
1 cup dry white wine
1 cup low sodium chicken broth
1 tablespoon fresh thyme leaves
2 teaspoons Dijon mustard
1 tablespoon all-purpose flour mixed with 2 tablespoons water
1 tablespoon heavy cream ((optional))
Salt and pepper to taste
