INGREDIENTS
4 boneless pork chops (at least 1.5 inches thick )
1-2 tablespoons olive oil
salt and pepper to taste
3 tablespoons butter
1 cup low sodium chicken broth
1 cup heavy cream (see note)
1 cup sliced mushrooms
1 tablespoon minced garlic
1/2 teaspoon salt
1/2 teaspoon freshly cracked black pepper (reduce to 1/4 teaspoon if using ground black pepper)
3 tablespoons grated parmesan cheese, more for topping (optional)
