Pork Chop Étouffée

"Seasoned pork chops, seared in a skillet and smothered in gravy with caramelized vegetables...."

INGREDIENTS
4 to 6 boneless, center-cut pork chops
1/2 cup plus 2 tablespoons olive or canola oil, divided
Kosher salt, freshly cracked black pepper, garlic powder and cayenne, to taste
1 cup quartered and sliced Vidalia or other sweet or yellow onion
1 cup chopped green bell pepper
1/2 cup all-purpose flour
3 cups chicken stock or broth
1 (4 ounce) can sliced mushrooms, drained, optional
Hot steamed rice
Pinch dried parsley, for garnish, optional
