3 lb. bone-in pork shoulder

2 yellow onions, diced

2 cups chicken stock

3 granny smith apples, peeled, cored and sliced

2 tsp. fresh thyme leaves

salt to taste

7 oz puff pastry (I used Dafour brand frozen and it was amazing!)
•
1 egg
•
1 tbsp. water
