INGREDIENTS
Crust:
2 1/2 cups all-purpose flour
2 tsp dried sage, finely crumbled
1/2 tsp table salt
16 tablespoons (2 sticks) chilled unsalted butter, cut into small cubes
3 oz sharp Cheddar cheese, finely grated
6 to 8 tbsp ice water
1 egg blended with 1 tablespoon water
Fresh sage leaves for garnish (optional)
Filling:
1 1/2 lbs (about 3 large) sweet apples, unpeeled, cored and chopped
1 1/2 lbs (about 3 large) tart apples, unpeeled, cored and chopped
2 tbsp vegetable oil
1 small onion, very finely chopped
2 lbs ground pork
1 tbsp light brown sugar, firmly packed
1 tsp kosher salt
1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp ground allspice
3 1/2 tbsp plain breadcrumbs
