3 slices bacon
1 pound raw pork loin
1 pound andouille or other spicy smoked sausage
1/4 cup water
2 cups chopped onion
1 cup chopped green bell pepper
1/4 cup chopped celery
1 tablespoon minced garlic
1 quart beef stock or broth
3 cups water
1/4 cup sliced green onion
1/4 teaspoon Cajun seasoning
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 tablespoon dried parsley
4 cups long grain rice
Bottled hot pepper sauce, for the table
