INGREDIENTS
3 cups chicken stock
1½ cups water
1½ cups medium/coarse cornmeal (slow-cooking polenta)
1½ cups cherry tomatoes, halved
1 cup Parmesan cheese, grated
1 cup Mozzarella cheese, shredded
½ cup sharp Cheddar cheese, grated
3 tablespoons butter, plus extra for baking dish
1 tablespoon basil, roughly chopped
¼ teaspoon nutmeg
kosher salt and freshly ground pepper, to taste
