To poache salmon
2 cups dry white wine
2 cups water
3-4 lemons
1 teaspoon salt
1 teaspoon whole black peppercorns
3 bay leaves
6 (6-8-ounce) skinless salmon filets or steaks, about 1 inch thick
Dill sprigs, for garnish
