I used Bakerella's red velvet cake recipe, but cut it in half and tweaked a few things.

You'll only need batter for one round 8 inch pan.

1 1/4 cups all purpose flour
•
1 cup sugar
•
1 tablespoon cocoa powder
•
1/2 tsp baking soda
•
1 egg
•
1 1/4 cup oil
•
1/2 tablespoon vinegar
•
1/2 tsp vanilla
•
1/2 cup buttermilk
•
1-2 teaspoons pink gel food coloring
