1/4 cup canned coconut milk
1/2 cup butter, melted
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour *
2 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
Frosting Ingredients:
16 ounces cream cheese, room temperature
3 cups powdered sugar
1/3 cup canned coconut milk
1 teaspoon vanilla extract
1 tablespoon dark rum (optional) or 1/2 teaspoon coconut extract (optional)
1 cup sweetened coconut, for topping (toasted, if desired)
