1/2 cup (120gms) white or castor sugar
2 tablespoons (30mls) freshly squeeze lime juice
3 tablespoons (45mls) coconut rum such as Malibu (21%)
2 teaspoons (5gms) tapioca starch
1/2 cup shredded coconut
