2/3 cup crushed pineapple (not drained)

1 1/4 cups all-purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

pinch of cream of tartar
•
1 cup heavy whipping cream
•
1 1/2 tablespoons granulated sugar
•
1/2 teaspoon rum
•
1 1/4 cups unsalted butter, room temperature

2-2 1/2 cups powdered sugar (more or less to taste)
•
4 tablespoons pina colada mix
•
1 tablespoon rum
•
maraschino cherries (with stems)
•
canned pineapple tid-bits or fresh pineapple
