4 eggs
1 - 8 ounce can crushed pineapple (do not drain)
1 teaspoon rum extract
1 cup sour cream
1/4 cup oil
1 1/2 cup shredded coconut, divided
1 - 8 ounce package cream cheese, softened
1/2 cup butter, softened
2 Tablespoons cream of coconut
1/2 teaspoon salt
1/2 teaspoon rum extract
4 1/2 cups powdered sugar
maraschino cherries with stems, for garnish
