1/8 cup Parmesan cheese, finely grated

1 ounce cream cheese, softened

1/4 cup chopped, jarred pimentos (about 1 small jar)

1/8 cup mayonnaise
•
1/2 tablespoon minced fresh parley
•
1/4 teaspoon kosher salt
•
1/4 – 1/2 teaspoon cayenne (to taste)
•
1/4 teaspoon black pepper

Fritters:
•
Pimento Cheese (that we made from above)
•
1 cup flour
•
2 eggs
•
1/2 cup buttermilk
•
2 cups panko breadcrumbs
