salt and pepper
3 medium or 2 very large waxy potatoes (baking)
3 tablespoons unsalted butter
1-2 tablespoons light olive oil (or schmaltz)
1 large onion, minced
2-3 cloves garlic, minced
2 cups cabbage, finely shredded
1 small leek, finely minced (optional)
2 tablespoons Parmesan or white cheddar cheese, grated
