Pickled Peppers

INGREDIENTS
Peppers (see step 1) 8 lbs total:
A typical mix is 4 lbs of hot peppers AND 3 lbs of sweet red and green peppers, but you can mix and match any type of peppers
5 cups vinegar (5%). Distilled white vinegar helps preserve the original color of the peppers. Cider, wine and malt vinegars may be safely used, but they tend to darken then color of the peppers.
1 cup water
4 tsp canning or pickling salt
2 tbsp sugar
2 cloves garlic
