"Lately when I've been going to my favorite little diner on Saturday mornings, I find myself ordering Eggs Florentine. Eggs and spinach have always been a great combination in omelets, egg bakes and frittatas, and I find myself enjoying the pair even more in the form of Eggs Florentine. However, most diners often smother this delicious entrée in a rich hollandaise, which is not my favorite sauce. Therefore, I was inspired to improve on my favorite dish by making a creamed spinach base in place of the hollandaise using everyone's favorite ingredient, Philadelphia Cream Cheese!
