"Lately when I've been going to my favorite little diner on Saturday mornings, I find myself ordering Eggs Florentine. Eggs and spinach have always been a great combination in omelets, egg bakes and frittatas, and I find myself enjoying the pair even more in the form of Eggs Florentine. However, most diners often smother this delicious entrée in a rich hollandaise, which is not my favorite sauce. Therefore, I was inspired to improve on my favorite dish by making a creamed spinach base in place of the hollandaise using everyone's favorite ingredient, Philadelphia Cream Cheese! INGREDIENTS
2 English Muffins - Split
2 tablespoons Butter
2 Garlic Cloves - Finely Chopped
6 cups Baby Spinach - Washed and Dried
1 tablespoon Flour
1 cup Milk
1/4 teaspoon Ground Nutmeg
4 ounces PHILADELPHIA Cream Cheese
1 tablespoon Vinegar
4 Eggs - Room Temperature
Salt and Pepper - To Taste
