INGREDIENTS
Nonstick cooking spray
1 1/4 cups  all-purpose flour
3/4 cup  whole wheat pastry flour
2 tablespoons  toasted wheat germ
2 teaspoons  baking powder
1 teaspoon  pumpkin pie spice or apple pie spice
1/4 teaspoon  salt
3/4 cup  sugar
1/3 cup  cooking oil
1/4 cup  refrigerated or frozen egg product, thawed or 1 egg
1 teaspoon  vanilla
1 cup  fat-free milk
3 medium fresh persimmons or 6 plums, pitted and chopped* (2 1/2 to 3 cups)
Streusel Topping (below)
Frozen light whipped dessert topping, thawed (optional)
3 tablespoons  sugar
2 tablespoons  all-purpose flour
2 tablespoons  whole wheat pastry flour
2 tablespoons  toasted wheat germ
1/2 teaspoon  pumpkin pie spice or apple pie spice
1 tablespoon  butter, melted
