Caramel:
2/3 c. sugar
2 T. water
Flan Custard:
3 c. half and half
4 eggs
1/2 tsp. salt
2 tsp. vanilla
1/3 c. sugar
Hardware needed:
Eight 6 oz. ramekins (3.5 inch diameter)
large roasting pan
heavy bottom saucepan
kitchen towel
Metal Sieve/strainer
hot tap water
tongs or Jar Lifter
