1/2 cup plus 1 tbsp granulated sugar

3/4 stick butter, softened/room-temp (or vegan butter alternative)
•
1 egg (or flaxseed-egg)
•
1/2 tsp peppermint extract
•
Simple Icing, recipe follows
•
Crushed peppermint candy, about 1/2 cup
•
Powdered sugar, about 1 cup – this is only needed for method #2 – see Alternate Preparation below
