Black Pepper (to taste)
1 tablespoon avocado oil
1 large Shallot (thinly sliced)
1 tbsp Black Peppercorns (coarsely ground)
1/3 cup Cognac or Brandy
1 cup Beef stock
1/2 cup Heavy Cream
1 tablespoon green peppercorns
½ tsp Kosher salt (to taste)
Parsley (chopped for garnish)
