INGREDIENTS
Makes 6 bruschetta,30 minutes or fewer
2 medium tomatoes
1 Tbs. olive oil
4 cloves garlic, minced (4 tsp.)
1 26-oz. jar roasted red peppers, rinsed, drained, and cut into 2-inch strips
1 tsp. honey
2 sprigs fresh rosemary
1 bay leaf
2 4-oz. balls fresh mozzarella, each cut into 6 slices
6 large slices French bread, toasted
