Pecan Upside-Down Cake – Fig & Olive Platter

INGREDIENTS
1 cup coarsely chopped pecans
1/4 cup light corn syrup (or honey )
1/2 cup firmly packed brown sugar (light or dark brown sugar)
1/2 cup unsalted butter
1/4 tsp ground cinnamon
pinch of salt
1/2 cup plus 2 tbsps sour cream (or greek yogurt )
1/2 cup neutral oil (( vegetable oil or grapeseed oil) )
1/4 cup milk
2 large eggs
1&1/2 cups All Purpose Flour ((make sure to spoon and level the flour))
1&1/2 tsps baking powder
1/2 tsp baking soda
1 tsp vanilla extract or paste
pinch of salt
3/4 cup granulated sugar
