1 teaspoon finely shredded lemon peel

4 cups cored and coarsely chopped pears
•
2 cups chopped plums
•
1 small quince, cored, sliced and poached* or 1 cup coarsely chopped pear
•
2 tablespoons lemon juice
•
2 tablespoons port (optional)
•
1/4 teaspoon vanilla
•
1 egg, beaten
•
1 tablespoon whipping cream
