8 cups peeled chopped peaches (about 4 pounds)

1 cup chopped golden plums (unpeeled for me, you can peel if you like)

2 cups chopped red onion
•
2 cups white vinegar
•
1+ 1/2 cups chopped bell pepper (I chose orange-purple ones)
•
1 cup granulated sugar
•
1 cup chopped roasted Hatch chiles (de-seeded somewhat)
•
4 large cloves garlic
•
1+ 1/2 teaspoons cumin
•
3/4 teaspoon salt (I use kosher)
